Buttery Cheesy Garlic Bread

When I do garlic bread it is usually slicing the bread, butter it, add garlic and parmesan, then broil. Nothing too complicated. It is never very crunchy though because it always the cheese that gets browned and not the bread. I happened upon this recipe the other day and realized my big mistake... toast the bread first! This is just as simple and yet tastes so much better. 

Buttery Cheesy Garlic Bread

4 cloves garlic
2 tablespoons butter
2 tablespoons extra-virgin olive oil
1 loaf crusty bread, sliced
freshly grated Parmesan cheese
chopped fresh parsley

Melt butter and oil with the garlic in microwave or small pan over low heat.

Toast the bread under the broiler. Remove when it is golden brown. Brush the bread with the melted butter mixture. Sprinkle liberally with cheese and parsley. Return to the broiler and brown for about 30 seconds.
