Brownie Berry Pizza

Brownie Berry Pizza

“And when all of the flourless chocolate cakes & chocolate mousse or ganache cakes have come and gone, there will still be nothing like a fudgy brownie, dry & crackled on top, moist & dense within, with a glass of cold milk.” - Richard Sax

Brownie Berry Pizza

1 box (1 lb 2.4 oz) brownie mix (water, vegetable oil and egg called for on brownie mix box)
1 - 8 oz package cream cheese, softened
1/3 cup granulated sugar
1 teaspoon vanilla
2 cups sliced fresh strawberries
1 cup fresh blueberries
1 cup fresh raspberries
1/2 cup apple jelly (optional - it doesn't add much to the taste, but it makes the photos look pretty)

Heat oven to 350°F. Grease bottom only of 12-inch pizza pan with cooking spray. Make the batter as directed on the box. Spread in the batter in prepared pan. Bake 25 to 30 minutes or until a toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely, about 1 hour. In a small bowl, beat the cream cheese until light and fluffy. Gradually add the sugar beating well after each addition. Add the vanilla and beat until smooth. Carefully spread the frosting evenly over the cooled brownie. Arrange the berries over the frosting. Whisk the jelly vigorously until smooth and brush over the berries. Refrigerate about 1 hour or until chilled. Cut into wedges. Store covered in the refrigerator.
